At Winton House Residential Care Home in Windsor, we are incredibly proud to celebrate the dedication and achievement of our talented kitchen team. Chefs Dave, Arthur and Lisa recently completed full IDDSI training, a specialist course that has equipped them with advanced skills in preparing safe, texture-modified meals that not only protect our residents but also bring joy to every dining experience.

The IDDSI programme, provided by experts from Safe and Tasty Textures, focuses on the safe preparation of meals across multiple texture levels, from pureed and minced to soft, bite-sized options, ensuring compliance with the International Dysphagia Diet Standardisation Initiative (IDDSI) Framework. This globally recognised framework offers a common terminology and testing approach to food textures and drink thickness, helping to reduce the risks associated with swallowing difficulties (dysphagia) in vulnerable individuals.

During their full-day course, Dave, Arthur and Lisa engaged in comprehensive, practical learning, mastering how to design meals that meet specific IDDSI levels and are still appealing in flavour, texture and presentation. Through hands-on demonstrations and expert guidance, they learned how to prepare texture-modified foods that are safe to eat, easy to swallow and visually appetising, without compromising on taste.

Why is this training so important in a care home setting?
Many residents experience dysphagia due to age-related changes, neurological conditions or other health issues. If food is not appropriately modified to the correct IDDSI level, this can lead to serious risks including choking, aspiration or nutritional compromise. The IDDSI Framework helps caregivers and kitchen teams standardise food textures and specify the safest options for each individual resident.

Dave, Arthur and Lisa were enthusiastic throughout the training, embracing the challenge with positivity and curiosity, and they’re already looking forward to sharing their new skills with our residents. They can’t wait to present exciting new textures and flavours at mealtimes, delighting residents with dishes that are tailored to their needs without sacrificing flavour or quality.
